Ken is a little hard to understand, but the video is great, I can’t wait to start making some Sushi. Everthing you need to know is there.

5 Stars Packed with Quality information
First of all, I am not a video producer so can not speak to the quality of this DVD other than from a viewer perspective. In my mind…it is clear and crisp and Ken is easily understood. I know one rater said the quality of the video was in question…I did not see that.

You will like Ken immediately. He is just one of those folks you know you would like. He speaks very clearly and slowly. I watched the video the first time just for pleasure and the second time I took a few notes. Jotted down Ken’s recipe for sushi rice and etc.

Armed with this video and a book such as the excellent “The Complete Book of Sushi” by Hideo Dekura, Brigid Treloar, and Ryuichi Yoshii. I can guarantee you will be well on your way to your first rolls or your first Nigiri sushi. One thing I would do before rolling your own though is to stop by a sushi bar and sit right in front of the chef. Watch him and enjoy a nice lunch or dinner. You will build confidence just watching him prepare the food.

The video covers a lot of stuff in a short time. (one hour) but it is well worth the spend.

The only thing I wish Ken would have shared was his recipe for spicy sauce. Guess I will have to go to Canada and ask for it. :)

Ken also discusses types of fishes and seafood, how to care for it, how to slice it, where to get it and etc.

You will enjoy this video (watch the bloopers at the end…it will confirm Ken’s sense of humor)

The video is great, it really help with my sushi parties. My wife is very happy with my improvings in roll making. For sure is a good purchase. Besides sushi making techniques there are few tips on cutting and handling bacteria, which are very helpful

5 Stars That’s it! Beginners guide to Sushi making
Well, I liked it a lot. It gave me all the information on how to prepare the fish and how to work with knife. The greatest takeaways however are the receipe for vinegard and wasabi - it is excellent! Being only an amateur with limited access to fresh fish, I would like to get more hints on how to handle frozen fish - what to look for when you are buying it and how to properly defrost it so it tastes best. Ken is so fast that it is hardly possible to see exactly how he prepares nigiri. But you will get it ultimelty :-)

I also got a book by Kimiko Barber entitled “sushi - taste and technique”, but get the DVD only if you are a beginner. The book is not necessary in that case.

After seeing the program and loving every moment the book is even more wonderful. Have tried some recipes and would love to have the money one day to plan the trip and drive according to the book. When living in London visited Spain 5 times - over 40 years ago. So come on economy allow me to save some money. And then I’ll be off ‘on the road again’!!!

2 Stars Celebrities go adventuring in Spain
Mario Batali has several excellent cookbooks he was written. Spain has a delightful and unique cuisine. This book fails to combine the two. I think this book makes an ok coffee table book at best. Many beautiful pictures of pain, food ingredients, scenery, and photos of the author is what the book is mostly comprised of. This book is thin on recipes, and recipes are simple. One recipe for serving pineapple was chopped pineapple, zest of a lime, and 2 tablespoons of molassas. To me, that is a preparation, and not a real recipe.

So if you are looking for a coffee table book and you like Mario Batali, this may be a good choice for you. Beautiful pictures, and tid bits about Spain make this book interesting. If you are looking for definitive recipes of Spain, you need to look elsewhere, this book is extremely thin on recipes.

I bought this for my brother in law and ended buying two more for my mother and a friend. They went crazy over the different recipes and pictures. My mother lives in Spain and yet was excited about this book.

I have recently visited Spain when I stumbled upon the PBS program in September. I loved the show so I purchased the book. While in Spain the food I had was absolutely devine and I loved the architecture and culture. Purchasing this book not only helps me remember my gastronomic and cultural experiences in Spain, it will also help me with my travel plans for my next trip back to Spain.

Wonderful and informative, not only in the culinary arts but also in the history of Spain. What I always wanted, a cookbook and guidebook all in one. Kudos to Mario, Gwyneth, Claudia and Mark. A great follow-up to their wonderful TV series. A must have!
